My question is if for example I install Plex Media Server in there and I restore my SD card, if there’s a way to make a backup of my Plex or everytime I restore my SD card I have to create a new media server and create all the different categories.

With Plex stopped, you can make a perfect image backup of the system.

When you restore, You restore the backup (tar) file.
