I would like to suggest a “flag” for offline media. I envision this working much like the “watched/unwatched” flag. In this case it would mark a show or shows as offline and would allow the information to remain in the library. Perhaps the entries would be displayed but grayed out. I am not asking Plex to keep track of where the media resides offline only that it still exists. After setting the flag the server would ignore the file allowing it to be manually copied to offline storage.
You can already do this…
If media isn’t available, it’s shown with a trashcan icon normally, unless you delete the media item inside the Web App itself… If you go to the Web App -> Settings -> Library you see a setting there for “Empty trash automatically after every scan” which will do just as it says it does. Everything with a trashcan icon on it is deleted from the library.
So if you delete something then go look at the detailed info for a media item or try to play it, it’s going to mark as unavailable. Until the next scan of your library. Then the info gets removed.
Now if this gets removed because a drive has been disconnected or is off-line, then the next time the drive is turned on or connected, it’s going to rescan, and come up as newly added media.
If you want to retain the information on media items that aren’t present but have been on your system once upon a time, turn this setting off and you get the trashcan icon for everything that has been removed by the system (and not by deleting it in Plex.) If you delete it in Plex’s Web App the details are just gone and would need to be reloaded the next time the media item is detected.

I do understand how the trash works but doing it this way, in my opinion, is just a stopgap. There are many times I want to empty the trash, such as after I have watched a TV episode that I do not want to keep.
I do not have a large amount of storage on my media server and would like to move some of my movies to offline media. However, I would like the title to remain in my Plex library, just marked as unavailable, thus the need for an offline flag. Again, I do NOT want Plex to keep track of where it is offline.
