Is there any way I can revert back to an earlier version of PLEX

This announcement has links to the last Plex Media Server versions that support Windows 7:

Plex Media Server support ending for older versions of Windows (7, 8, and 8.1), macOS (10.11, 10.12)

Starting with version 1.32.0 (planned for public release on April 10th), Plex Media Server will no longer support versions of Windows older than Windows 10 (version 1607) or macOS older than 10.13 (High Sierra).
