I am looking for ideas on how to only display files not viewed.
How would i have video thumbnail remove itself from a library after i have watched it leaving only unwatched files behind?

In Plex Web you can filter to show unplayed movies.
When viewing a library, click on All and choose Unplayed from the list.
It is for your account only, not other users on the server.
I’m not aware of a way to list movies/shows that have never been watched by any user.
There isn’t a way to do this. As mentioned above, you can create some filtered views that only show unwatched items, but that only works for you and only until you change the view.
As long as the files exist, PMS will show them. The only way to do what you want would be to create some sort of script outside of Plex that will delete/move your files out of the folder Plex is monitoring.
