I would like to optimize every movie I have stored (to original quality) and remove the original file. Is there a function for this or do I have to do it manually?
If you’re using Plex to do the optimization, the optimized files are tied to the original library items. To achieve what you’re aiming for you’ll need some more manual interactions (or handling it entirely yourself using e.g. Handbrake).
There’s a feature suggestion to add that functionality… you can be the 100th vote for that
