Part of the problem here is that you’re keeping a lot of extra directories which you really do not need.

These should all be simple files in the Season 7 folder. They should not be directories. You’re wasting a slot for each episode for nothing.
If you have as single files, when the file gets changed, the “Season 07” folder will catch the change as it should and PMS will be notified.
As first step to remedy this, I recommend getting a renaming tool, such as FileBot or TheRenamer and cleaning up the directory structure. It will give you proper Series/Season xx/episode structure without the extra waste.
Then, after cleaning it up, if you still run out of slots, we can increase the number of folders to watch at the DSM level.
Also:
Subtitles don’t go in subdirectories, they are placed adjacent the file.
