So, after weeks of being hella frustrated, I was able to come up with a solution/workaround.
I found this article (although, be it old) that shows you how to downgrade your plex software on your fire device. I personally found the functionality of the build from December 16 gave me what I wanted. Something to note, plex uses the armeabi-v7a architecture, so be sure to use that varient.
