I notice that when I play again songs that I already played they starts from the last few seconds, like if the player memorizes the time position of the last play and starts from there…
This is very annoying, when I play an album I have to manually press reverse button to go back at the beginning of each track… maybe this is an option I can change from settings?

Your library is probably configured to store the track progress. While this can be helpful for audio books or lectures, you might prefer disabling this for music libraries.
This is part of the PMS library configuration (not specific to Plexamp):
… > Manage Library > Edit… → Advanced > Store Track Progress
