Interesting, I switch off AGS on my laptop, and it’s fixed as well. Hopefully Plex can address this quickly!
Actual issues always take lower priority here. Plex management is too busy pushing for new features no one wants, so bug fixes and usability improvements end up taking the backseat.
Just use the web app for now, if you’ve been using plex for a while, you should be used to the way they handle things. Android app has been half broken for years now. This is why plex has been gradually bleeding users to emby/jellyfin etc.
Mojave is a downgrade from Catalina.
Mojave = 10.14
Catalina = 10.15
Big sur = 11
Monterey = 12

So guys after some research it seems like the Plex Team or the software itself is NOT to blame here. There is a discussion here which says that Apple included a faulty hardware driver for Intel HD 4000 GPU’s and knows about the issue. However it seems very unlikely that Apple will fix the issue, because it declares hardware with a Intel HD 4000 GPU “vintage” and doesn’t want to support it anymore. If you want that faulty GPU driver out of your system to make Plex and other affected applications work again you basically have 3 options.

(The one which fixed the issue for me) Reboot your Mac and press CMD+R during the reboot. Select the reinstall option for Catalina and just reinstall it. Your files shouldn’t be affected at all, but to ensure that you should consider making a backup before reinstalling the OS. After reinstalling it you should consider the installation of the security update before the faulty one you can find it under this link.

Just restore your system from a time machine backup to a point where it worked ok for you. Maybe for that to work you also need to reboot and press CMD+R and select the specific option for that.

Just wait for apple to fix the issue which is the most unlikely option of all.

Well, I installed 10.15.7 on top of itself, as well as the 2021-006 security update, and I’m back to up and running! So thanks to everyone for the suggestion.
I’m wondering if Plex will be able to figure out a workaround to make it run under the 2021-007 security update, or if Apple will fix their bug, or if we’ve just hit the end of the road…
As in the posts on the link since in the apple forum, I can’t confirm what people say there.
I have now unpacked my Macbook Air 2011 11 inch with the 3000 graphics card and Catalina and the Plex Player starts normally.!
So People talking there the support is to end but this is stupid, Apple doing here in the last security update a mistake or why my MacBook Air 2011 11 inch with Intel HD Graphics 3000 run without Problems … (for tests)

Hello, I had the same problem. After reading many of these replies, solved the problem of it crashing on start by turning off Graphics Switching on my MacBook Pro (Retina Mid 2012) running macOS 10.15.7 with the latest security patch. This setting is in System Preferences → Energy Saver → “Automatic Graphics Switching.” Uncheck this box.
This setting means that graphics ONLY runs on my embedded NVIDIA GPU. It does not run on the Apple internal graphics hardware. If you don’t have an embedded 3rd party GPU, this setting is not available.

With this information in hand I was able to fix this without re-installing however the procedure is technical and requires command line. Use at your own risk. This could break your system.
- Download the previous security update from above and extract the AppleIntelHD4000 files from the PKG, multiple options for doing this Suspicious Package from Mothers Ruin Software is one option. Save these to a folder on your Desktop.
- Disable SIP (System Integrity Protection) Reboot
- Mount File System Read Write: sudo mount -uw /
- Copy the downloaded AppleIntelHD4000 files from folder on desktop to System/Library/Extensions, must do via sudo command from Terminal, Finder will not allow you to copy them. sudo cp -r ~/Desktop/Graphics /System/Library/Extensions/ commands should be changed to your specific folder name. Reboot
You can now enable SIP if you would like. This allowed Plex to open for me without needing to do a reinstall and all the rest of the latest Security Protections installed with the latest security release are there however this older Intel driver could make your system vulnerable since something changed in it with the latest security update. Again use at your own risk.
Adding in this is specific to MacMini Late 2012 model with the Intel HD 4000 graphics, other devices may have different graphics chipsets.

I just wanted to follow up and report on my experience with manually installing the old AppleIntelHD4000 graphics drivers as described above.
So everything went smoothly, macOS Catalina recognized that update 2021-007 was properly installed and Plex would launch without crashing, but I noticed that every 5-10 minutes, some white horizontal lines would briefly flash on the screen and then disappear, even without Plex running.
So I reinstalled Catalina plus update 2021-006, and now everything is well again. So just be aware that you may encounter some visual glitching. Thanks to @AJ67Stang for the motivation to give it a try!
So I started the procedure for reinstalling 10.15.7, then the upgrades - and was greeted with a Developer Beta of 2021-008 Catalina Security Update. I am enrolled in Beta program on this machine, and I have found NO information about it. I am assuming it is a fix for this bug (since it affect SO MANY applications, INCLUDING Safari). I will update you all as to whether this fixes the issue. If not I will have to do the 10.15.7 > Sec Up 006 again…
UPDATE - Looks like a forthcoming security update will fix this issue. If you go down the path of reinstalling 10.15.7 over the current 10.15.7 (Using the full installer from Apple), you will be prompted to install 3 more updates (new Safari, etc). One of them (if enrolled) as of right now is a beta 2021-008 Security Update. After installing those Plex is running! If you can wait I am sure the update will go final in the next few days and will be pushed to those who have upgraded to 2021-007 already. If you have NOT upgraded to 2021-007, you WILL be prompted instead to install the beta of 2021-008!

Thanks a bunch, while waiting for 2021-008, this indeed solved the problem (I can use Plex again, don’t care much about my battery anyway since it is 7 years old and pretty much dead)

With the latest security update for macOS Catalina 10.15.7 (19H1615) the problem was fixed finally
Security Update 2021-008 Catalina does in-fact solve this problem for me. Plex App for MacOS works again.
Security Update 2021-008 works for me too on mid-2012 Pro 13inch.

I had already wound back my system to 2021-006 as a temporary workaround so I don’t know whether 2021-008 still solves the issue if you install 2021-007 first.
Once -008 was available, -007 was no longer offered as an update option, so I skipped over it.
