Plex constantly changes metadata

My Plex server runs on a RPi 3 and I am nearly completely satisfied with Plex. But I faced an issue concerning my movie library. A few days ago I added some movie files to my library. Plex fetches the metadata for each movie from the Internet. Although I set the agent language and country to German(y) because I live in Germany, Plex still just uses english information. That’s not the problem because I can easily change the metadata to fit my needs. After multiple restarts of the RPi I have the following problem in Plex: When I want to edit the metadata of a movie again, Plex downloads its own (wrong) metadata and replaces my (correct) metadata, although the metadata I changed manually should be locked according to the little sign beside each field. Plex also changes the metadata on its own when I click on a movie and the pre-movie screen is shown.
How can I change this behaviour? I don’t want to manually change the metadata every time I select a movie.

Thanks for trying to help me. I will try to reduce my problem with the given instructions. But this is not the main problem I explained. I can live with it when Plex doesn’t give me the correct information about my movies. My problem is, that Plex automatically refreshes all metadata and overwrites the custom metadata inserted by me. I would like to prevent/deactivate this behaviour.

TL:DR:

  1. make sure that ‘matchable’ media are named in a way so Plex can recognise and ‘match’ them.
  2. Media which are ‘un-matchable’ (Music Videos, many documentaries, youtube snippets, video courses etc) you better create a separate library of the type ‘Other Videos’ which disables the attempts to ‘match’ the items in it to online metadatabases.

My media files are named as requested in the official naming conventions. All of my movie files are matchable media. There is just a conflict between my german movie file names and the (as it seems) english online database (although I get correct german summaries for all of my movies). Now, I used the instructions for german metadata, at the first sight all data looks correct. But in the next versions of Plex server an option should be added to control this behaviour, it is very frustrating when you edit the metadata for your needs and Plex just doesn’t care about it, also when I locked some information fields.

Tip: with a RasPi as the server, you never have your media internally stored in the server. Therefore you must never activate this checkbox:
Settings - Server - Library - ‘Empty trash automatically after every scan’

Having this activated can contribute to your issue.
