Try disabling hardware acceleration in settings > Transcoding. That fixed it for me. Apparently a recent update broke hardware acceleration. Either keep it disabled or rollback. Theres also been talk of disabling “loudness” in a setting somewhere that is also causing crashing for some. Try these one at a time and report back if one of them fixed the issue.
The logs do not show crashes but in each case a database optimization that is taking a long time to run
It is possible that if you leave the server to run that the database optimization does complete eventually - How big are the database files ? Sometimes optimizations may take over 20 minutes to complete

It is possible there were some crashes if other threads were held up too long whilst the optimization was running and getting an exception - this specific issue was addressed in the latest beta version 1.30.1

So suggest running with 1.30.1 and run a database optimize manually and wait until it completes
I actually figured it out and feel kind of like an idiot. I actually had a script running in Tautulli that would restart the server if it detected Plex wasn’t running. For some reason it was just randomly restarting Plex even when it was running fine. Sorry it took so long to respond.
