Plex deleting Folders when adding new ones!

I am trying to create a music library on my Plex server. I do not want to add ALL my music but select folders and artists. I create a Music library and add an artist’s folder to it. No problem! I may even be able to add another folder with no problems. When I get to the third it will add the folder but then delete all my previous folders from the music library! I don’t understand why this is happening. It’s obviously user error. Can anyone please help me?

Sorry, you can’t do it that way to just add a few select artists into Plex.

Plex is made for ‘watching’ one or a few folders.
In these ‘watched’ folders there should be the following folder structure:

/Music
   /Artist Name 1
      /Album Title 1
         1. Track Artist  - Track Title.mp3
         2. Track Artist  - Track Title.mp3
         3. Track Artist  - Track Title.mp3
         ...
      /Album Title 2
   /Artist Name 2
   ...
