I noticed that my server that I want to run the public stable version has been updating to the beta version.
I run the plexinc/pms-docker:plexpass tag so that I can restart the container and have it update, I have the server update channel set to public. Is this an issue or am I not understanding something?
The “plexpass” tag always pulls the latest beta. What you want is the “public” tag which behaves similarly (pulling the latest version on restart) but pulls from the stable branch.

Short version: When using Docker, the update channel you choose in settings has no impact (other than alerting you when a new version is available, for that channel).
