Have you tried the nsmb.conf file that was posted in here last week? That has been working great for me using SMB. But the other option is to also keep the finder windows open to those folders. Either way, there are some workarounds that can be used until the issue is officially resolved.

I have re-enabled all automatic scanning, but I did not re-enable empty trash. We need it to not empty trash so we know when it messes up. I also no longer keep the finder windows open. However, I still have them to open at startup incase this file doesnt fix it long term.

The only thing I can say is that I do not mount my drives through the built-in macOS “connect to server” option. I exclusively use AutoMounter. I also use the AutoMounter Helper App to be able to mount them in /Volumes, which requires an AutoMounter Pro license. Maybe this is the difference?

Make sure the file is saved to your desktop as nsmb.conf. Then click Go → Go to folder. Enter ‘/etc/’ without the quotes. Drag and drop the conf file into that folder, it will ask you for admin approval. Confirm the file saved in that folder, then reboot. Adjust your network paths to connect over SMB.
