As the crash seems desktop related I see no logcenter acivities.
Seems to be working fine on my iMac after updating to macOS 11.6, running Plex for Mac 1.35.1.
Maybe you want to upgrade the version of Plex for Mac before further troubleshooting?
The same probably goes for the server version (not sure which you got installed as you’re listing both 1.18.5 and 1.24.1 – the latest public release is version 1.24.3).
Fix so far:
egoebelbecker suggested a manual update to 1.35.1.2632-c6783c78 and it seems to have fixed the issue to me.
Thanx to him and it seems to work so far. If it fails again I will report back.

I have this problem as well. How does one update manually?
Go to Plex download pages, at the bottom of this page.
Download the latest player and/or server. Player can be installed on your computer.
the spk has to be installed in/or your server. I have Synology, I go to Package center and at the top of page you will find manual install field. I am no pro but it is easy. Good luck

manually updating to 1.35.1.2632-c6783c78 seemed to fix it
I think the automatic update failing is what’s causing the crash.
It crashed with 11.5.1 as well. Manual update was ok after.
Same problem.
Updating manually resolved the issue for me on macOS 11.6.
