This is an FYI for anyone else experiencing the same issue, and/or if it helps the devs in any way.
Server Version#: Synology, DSM7 1.24.3.5033-757abe6b4
Player Version#: Plex for Mac (Version 1.34.1.2590-74ea7099)
Note: The latest version as of writing is 1.35.1.2632-c6783c78 (came out few days ago). However, the Mac app does not seem to be able to update successfully because of the below.
I noticed this as of today.
I start Plex for Mac and after about ~30s - 1 minute, it crashes. I get the Mac’s popup asking if I want to report it, reopen, or ignore.
If I click on reopen, It then asks to be re-opened via iTerm (➜ Downloads /Applications/Plex.app/Contents/MacOS/Plex; exit)
And crashes again after ~30s-1 minute - rinse & repeat.
Removed the “exit” just in case, managed to see this

libc++abi: terminating with uncaught exception of type std::runtime_error: Log: Error handling format string 'Download %s of %s progress %s of %s bytes (%d%%)': invalid type specifier

It also asks me if I want to report this crash (which I hit Yes).

Solution: Update Plex for Mac manually to 1.35.1.2632-c6783c78. Issue is resolved.
