When I play files with any other player, I get no subtitles. When I play the same file with Plex Windows, I get subs (at the top of the screen) when turned off; if I turn them on, I get 2 sets (One at the top, one at the bottom.) Here are the subtitles listed from “Media Info” inside Plex:

This seems to have started with the last player update. We watched the first three episodes of the series without issue, then there was a player update, and all the episodes including the ones previously watched now have this subtitle issue.
So after I made this post, I did some more research. EIA_608 are apparently “Closed Captions” which can be embedded in the video stream itself, and are not shown as a separate stream in the MKV container. Since the files I was viewing already had perfectly good SRT subtitles, I sought out a way to remove them with FFMPEG:
Note that this is still an issue with how Plex is handling these sorts of captions in the Windows Player (Plex Web did not exhibit the issue, and I have no other devices to try at the moment). If the GUI is going to show the subtitle / CC stream in the list, the user should be able to disable it. In this case, the player’s Subtitle dropdown was set to none, and still Plex showed the CC’s. The CC’s were in the list, but selecting them or unselecting them did nothing, they are on always.
