First off I’d like to say thank you for all of your help.
Unfortunately nothing was still working by Sunday evening and I finally gave up and did a fresh install of Plex including all the settings by following these steps.

So far everything is working like it used to now. I have LMA at the bottom of the list (unchecked) and it’s having no issues finding movies now regardless of how the folder is named. It is kinda sucky I lost all my stats and had to start over but at least it works like it used to.
