This is what I saw from the log. I originally posted this in another thread that was dedicated to a docker install. My install is standard windows under Windows 2012. The server has 48G of memory dedicated to it.
Not sure where else to look at this point. The server is crashing every night and sometimes during the day. I have tried downgrading to several older versions and it hasn’t helped. I also went through the process of dumping and recreating the com.plexapp.plugins.library.db DB. The only error I see in the “Plex Media Server.log” is
Oct 12, 2021 03:28:27.119 [12604] ERROR - Soci Exception handled: sqlite3_statement_backend::loadRS: out of memory
and
Oct 12, 2021 03:28:29.707 [15744] ERROR - SQLITE3:0x1cb238d4, 7, failed to allocate 85120 bytes of memory.
These sure sound like memory leaks as the windows server running plex has 48G of memory allocated to it.

Here is a second set of logs from another crash. It seems to crash pretty regularly now. Hopefully someone can look through the 2 sets of logs and find something relevant.
