Any update for this? I reinstalled windows and installed plex again to be plagued with the same issue. I am concluding that it could be the version of windows.
OS Name: Microsoft Windows 10 Pro
OS Version: 10.0.19041 N/A Build 19041

Any assistance would be greatly appreciated.

There seems to be elevated reports of hardware transcoding for Intel hardware on Windows causing issues lately - do you have hardware acceleration enabled and if so could you test to see if disabling stops the crashing?

I’ve passed this on to our resident transcoder expert and will let you know when I get feedback.

Hi, I have reinstalled both OS and Plex 3 times now to test out different scenarios. I have not enabled hardware acceleration this 3rd time and PMS has been very stable. My system has an i7-4790 and a GTX 1080Ti. I used the same pc to game as well. I’m not sure if while I’m gaming and plex attempting to transcode if that causes the PMS to crash. Since disabling “Use hardware acceleration when available” I have not encountered the issue.
