Plex media server keeps losing connection after recent update

Server Version#: 1.41.4.9463
Player Version#: 2.147.0.70

I have been running my Plex Media server for personal usage on a Windows 10 Pro machine.
It has been fine without any issues until the recent security update 2 days prior from Microsoft. I have uninstalled that update and reverted it to the previous one.
I also updated my Plex server to the latest version.

However, my Plex Server keeps losing connection with a 503 unavailable. I also am left this “myplex/launch?X-Plex-Token=local xxxxxxx”. At times. If it is working and I am maybe editing a movie. It will also just buffer.

As I am streaming movies to my xbox. It will buffer and lose connection every 20-30 minutes. I then have to reboot the server. Or when opening any app. It will say server is unavailable.
I have also noticed on my server dashboard it won’t show connected devices. Even if there are devices currently using Plex.

I have tried reverting back to the previous version of Plex as well. But the issue still persists. I have also downloaded the latest x64 bit release and installed that to see if worked. But no luck problem wise.

Any suggestions or trouble shooting please?

After restarting the server after one of these incidents, wait 2-3 minutes and provide a copy of your server logs
