Server Version#: Latest (or any rollback I’ve tried)

Running Mojave on my 2013 Mac Mini, its been pretty flawless up till a few days ago but yesterday PMS suddenly quit as I was halfway thru a movie, now it won’t open again… I’ve tried absolutely everything, I’ve even re-installed a clean OS but PMS loaded up once yesterday and then this morning, same problem, won’t boot up at all… I get the little Plex arrow in the main menu bar for a few seconds then it just disappears. If I click the mouse on the Plex arrow, sometimes I get the beach ball of death then it quits, sometimes it will open the sub menu which just shows Server is starting at the top for a while then same, just disappears… Before I re-installed macOS, I tried numerous older versions with exactly the same result… As I say, even after the macOS install, it loaded up yesterday ok so I added all my libraries again but this morning it had quit again and same, won’t open up…
This is along with all the other issues I’m having with Plex, audio syncing is nothing short of a disaster, keeps stopping the sync halfway thru, have to start it again manually, database errors as well… Casting from iOS is a joke as well, if it even works…
And trying to watch anything on Apple TV Plex app makes me want to cut my wrists, it takes forever to load anything up when I click on films or TV shows etc and then takes an age to start playing… There ain’t any issues with my home network, everything is top of the range and hard wired, don’t have issues with any other video streaming apps, netflix, nowTV, amazon etc, all work well, not that that should matter as I’m only trying to play stuff off my own Mac…!!
I wouldn’t mind but I’ve been running Mojave since it came out last year but this last 2-3 weeks with PMS has made me want to put a hammer thru my Mac…
Anyone offer any advice…?? IT’s not big deal to go back an OS or 2 btw altho it would be a pain in the ■■■■, I don’t use my Mac Mini for anything other than a server… However, I’ve never done this with anything before ever, the point of new software is that it works better than before, right…!!!
