@anon18523487 found another bug with the iOS/iPadOS app that I can reproduce all of the time. Check this post here: Depending on how downloaded content is played, some streams do not show up
TL;DR: subtitles and other streams will disappear if you play downloaded content from the main screen, not the “Downloaded” tab
