The bug only occurs if the user tries to play downloaded content in the home page, when there is a connection back to the server. Steps to reproduce:
Click on an episode in the “Up Next” list
Click “Play”
Only the first audio and subtitle streams are force-selected and available. All other streams disappear from the options list.
The bug does NOT appear if you manually go into the “Downloads” section on the sidebar, click on the show and episode, and press play. In this case, all audio and subtitle tracks show up correctly, and you can switch between them.
If you can recreate using 1.32.4 (which contains the fix for this), grabbing the server debug logs and the player logs. The clients also need to update to use the PMS fix.
I’ll submit it for you.
The other was for the Android client. Possibly similar but different enough.

For everyone else, here is the setup and reproduction steps I used. I can still reproduce the issue on the following versions:
Server: 1.32.4.7195 (up to date as of writing this)
Client: iOS 8.20 (up to date as of writing this)
The client device is an iPad Pro 12.9-inch 5th generation running iPadOS 16.5 (20F66) (up to date as of writing this).
Steps I took before gathering logs:
Deleted all previous downloads
Made sure server was up to date
Made sure client was up to date (by checking App Store updates – although I may have not gotten the latest if Plex does staged rollouts.)
Downloaded one episode of a TV show as a test.
Went into the media details within the “Downloads” tab. All audio and subtitle streams show up correctly.
Started playing the content within the “Downloads” tab. I can choose between the different subtitle tracks without problems. The file itself only has one audio stream so I cannot verify if you could switch audio tracks too.
Went into the media details within the “Home” tab. All audio and subtitle streams show up correctly.
Started playing the content within the “Home” tab. The “Subtitles” setting inside “Playback Settings” show “Off.” When I enter it, no subtitle option is displayed, other than “Off” and “More…” (to download from OpenSubtitles). The “Audio” setting option is gone entirely, although again I am unable to verify if switching was an option given that the file only has one audio track.
