Plex on Roku 3, Chinese subtitles have stopped working

Hi all.
I have a Roku 3, Plex server on my Windows desktop.
I have added optional Chinese subtitles to hundreds of titles in my video collection via Handbrake.
The subtitles were imported into Handbrake in SRT format with UTF-8 encoding.

I have been doing this for a long time with no problem, but suddenly yesterday, Chinese subtitles stopped working.
I confirmed in VLC Media Player that the subtitles are installed and working correctly.

On my television, via Roku 3, non-Chinese characters are showing up, Chinese aren’t.
When the subtitle is this: * 中华人民共和国 *
My tv is displaying this: * *

I haven’t changed any settings in Plex on the device or computer/server, nor any settings in the Roku.
I confirmed that old movies that previously played with no problem now do not display the Chinese characters.

I’m having a similar issue with portuguese subtitles. After last week’s update to the Plex Server (I’m running the server on Mac and watching on LG SmartTV Plex app), the video will stop playing after less than 1 second. If I disable the subtitles, it plays fine. Both MKV and MP4 files are giving me this issue.

My subtitles are SRT files, they were working normally before the update to the server. Samsung TV Plex app works, so I wonder if there is anything that I can do to the server, as I can’t really do anything to the TV app. iOS app also plays fine.
