can I connect 2 external hard drives into shield and have plex read both of them? I know Plex can read at least one, as it is doing already but I would like to connect another and have plex read both simultaneously.

I have not tried that but you should be able to plug in two drives and create two different plex TV (or Movie) libraries (one on each drive) and Plex will blend all the contents…
