Plex Server hangs frequently during photo folder scanning

Since days ago Plex Server hangs making the server not accesible, the pings are replied but not ssh or webmin access available, only hardware restart make it accessible again, but the hang up is frequent at least 4 times per day.

I do not know how many files you added but you’ve a) overloaded the scanner or b) user plex not have permission to the directories to read the files themselves. All 6 of your log files are full of this error. Break down the number of files you add at any one time. Do this by adding one of the subdirectories. There is no limit to how many individual subdirectories you can add. PMS is best if you add only 5000 of any media type at one time.
