Plex Server Randomly Stops Running

I have recently rebuilt my Plex Server using Linux Mint, Julia. when logged in everything works fine, I have yet to have it up and running for a full 24 hours. When it crashes I login to the Linux box and it starts working before I hit the desktop. I an new to Linux but already a fan, I am more then positive I am missing something, just not sure where to look or what would cause this. Any help would be appreciated.

Please enable DEBUG logging and capture again at next failure.
This does not use more disk space. It only enables more detail.
I can only see:

Network failures (DNS Lookup failure) and slow database.
