Plex struggles to transcode

Server Version#: latest docker from plexinc/pms-docker
Player Version#: Firefox 89.0.2 - Plex web

I have no problems to transcode my 4K 10bits HDR Files on a Plex web player but when I add srt subtitles Plex is struggling. I use of course hardware accelerated transcoding with and Intel® UHD 630

No subtitles, no lags on the web player

With subtitles, it plays, stops and loads every 10 seconds
