On this support page, at section TV Show Agents/Plex Series, last sentence says:
”By default, metadata gathered will be based on info from The Movie Database, but you can adjust that for the library or a particular show, as desired.”
It says it can be done but doesn’t explain how and I can’t figure it out?

In case you’re wondering why I need this, it’s for the BBC show ‘This World’ which at TMDB is not well covered (entire years missing, episodes missing…) and despite having used the naming used by TVDB - TVDB is much better for ‘This World’ - it still doesn’t scrape the titles and descriptions of the show, despite TVDB apparently being a secondary choice for matching when TMDB is not enough.

To elaborate a bit on Otto’s answer, you would use something like the hosted web app to navigate to your show, This Word, at the highest level, meaning up where it shows the seasons, not the episodes for a season. I do that by clicking on the show’s name under any poster I can find for it, usually on my Home screen. Then I use the Edit pencil, then Episode Ordering, and Save Changes.
