Please add the ability to remove individual synced items when you are offline.
I live in a country with terrible internet connection, and I travel for extended periods of time when I turn everything off in my home.
I would like to be able to delete items as I watch them away from home, without the requirement to have contact with my server. The next time my device talks to the server, it would sync watch status, and download any new shows.

I fully agree with this and find it to be a glaring oversight in the development of the (iOS) App and Sync feature.
This is crucial for when I need the space for other Apps or system updates, where if the server happens to be offline I now have to completely delete ALL content in order to free up space. Which in turn means that content I have yet to consume will also be gone.
I completely agree as well. I just got back from a trip where in order to free up more space for photos on my iPad, I had to delete all offline content - 70% of which I hadn’t seen yet.
Another vote for this! I ran out of space on my tablet while travelling and Plex was the biggest spender. Being able to prune would have been incredibly useful!
