So after several days trying to get it to work no matter what I tried. The only way to have Remote Access to Plex through my “new” Sophos XG Home firewall. Was to follow what others have suggested but I had to use the standard Plex port of 32400. I even added a UDP Business rule and a standard Network rule. After I added both of those rules and went back to the standard port it finally worked. This is also on top of dealing with the AT&T U-Verse IP Passthrough. Although I was able to use the public subnet area and almost completly pass through all traffic through the Sophos.
