When I click on the Plex Media Server icon in Windows it takes me to http://127.0.0.1:32400/web/index.html which is client version 3.31.1. When I go directly to app.plex.tv/desktop#!/server I get client 3.37.2. Only the latter supports the collections I’ve created. Why do I get different web versions, and can I get the app.plex.tv to open when clicking the icon in the Windows taskbar?

The one with 127.0.0.1 is the web app that comes bundled with your media server, so it only gets updated when you update to the latest media server version (and if they decide to include it).
I don’t recall if there was a way to have it open the hosted app instead of the local one but you could always just bookmark app.plex.tv/desktop and go directly from your browser instead of using the tray icon.
