I suppose for one… some of those clients run in your browser, others don’t (namely Plex for Windows).
Web interface and “Server” should refer to the same “client type”: Plex Web – where one is using a version of Plex Web hosted by Plex (http://app.plex.tv/desktop – as we write, this is Plex Web version 4.46.2) and the other is locally bundled with your Plex Media Server (e.g. http://127.0.0.1:32400/web or http://localhost:32400/web if you’re on the same machine as that PMS; http://[PMS IP address]:32400/web otherwise – version depends on which version of PMS you have installed).
You should be able to distinguish those easily by opening the app settings:
Settings > Plex Web > General that shows what particular release you’re using; use the browser URL to distinguish if its the hosted or a bundled version of Plex WebSettings > Plex for Windows > General
