I am trying to add season 8 (which is a brand new season with only one episode) to a season I have already had in Plex. I have tried every naming convention including “Specials” with “S00E99” and nothing I do will get this single episode to show up in Plex. Does anyone have any suggestions?

Could you provide a bit more info:
Show name, your current file structure and current file naming
D:\TV Shows\Game of Thrones S01 - S08\Game of Thrones S08
Game of Thrones - S08E01 Winterfell is the filename
same!
Game of Thrones - S08E01.mkv
don’t see this episode

I redid my entire naming convention to match yours. I even went out and downloaded a new copy of the file…still nothing.
ok, so it might be time to try the Plex Dance.
…and if that does not solve it, then I am out of ideas, sorry
just, one more idea… check that the permissions on the Season 08 folder are the same as the other folders

Also double check your agents list. I have The TVDB at the top of the list, and the match works for me as well.
My file autoloaded with the name “Game of Thrones S08E01.mkv” and matched correctly.
I did the “Plex dance” and now I am showing 8 seasons. Thanks for the advice.

From experience it is always worth following the Plex naming Guides for your media.
While Plex will quite often make a reasonable job with incorrectly named stuff, (that includes naming of both files and folders) these sort of issues usually end up presenting themselves sooner or later… just my 2c
