This thread seems to be more technical than the one I posted to about this issue
My setup is an Ubuntu 16.04 LTS x64, 8-core AMD FX-8120 system with 16GB Ram, 60GB SSD (for OS only), 22 TB RAID-5 disk. Horsepower, storage , memory shouldn’t be issues, though the system is used for a lot more development things, i.e. not dedicated only to Plex. This said the load average is usually below 1, but PLEX activity will occasionally push it up past 8.
I am seeing this, which I know isn’t true, it just finished recording a show:
