Based on your OP I considered you prefer a short response 
Longer form: do you have a backup from which to restore your previous setup/configuration?
Alternatively you could check if there’s a backup of the Plex database created from a scheduled maintenance task and attempt restoring your previous configuration from there:

Just checked and I have no past backups. when I reset windows I lost all of that. I am a bit ignorant on working out problems that relate to systems or software. I have found that I don’t have any local backups prior to my resetting windows.
My original server was called Fornet20. When I re downloaded Plex following the reset I called the server by a new name “Plex Fornet”. I expected that I would have lost all my data but that was not the case.
When I opened the Plex app in Chrome my old server name opened up with no data in it. At the bottom of the menu list was a command “More”. I clicked on that and it took me to “Plex Fornet” and everything works fine except that it states that the server “Plex Fornet” is “Pinned” to the old server name.
I then tried to delete the old server which it did as far as menu choices were concerned, but it still requires me to click on “More” to get to “Plex Fornet”.
Also I noted that following this I lost a lot of menu items including “Settings”. from both “Fornet 20 and Plex Fornet”.
I then tried uninstalling Plex via the Windows uninstall process, however after reinstalling the Plex Server it was identical to the Plex I uninstalled.
I would dearly love just to somehow totally delete Plex and start totally fresh but I don’t know how to achieve this.
