The Plex app for iOS supports deep links, and I’ve gotten it to play a particular playlist on my device, but it always starts with the first video. Any way to get it to play in shuffle mode instead?

No. Not that. I am taking about an ios shortcut or url scheme to start playing the playlist shuffled, rather than as I set it up.
Right now, the ios shortcut works, but plays the playlist in regular order when I say “Hey Siri, play my night time plex.”
I’d rather have full iOS shortcut support, than just the shuffle feature.
Workaround for your situation would be to duplicate your playlist and add &sort=random to the URL before saving under a different name. Then you’d have to tell Siri to play that one instead of the unshuffled (with the same content).
