everyone here must actually use Plex, what do you use to rip dvd to play on plex? Running Ubuntu 18.10.

To rip DVDs & Blu-rays: MakeMKV, makemkv.com. This provides an unaltered copy of the selected video/audio/subtitles tracks in a MKV container on your computer.
To transcode video: Handbrake, handbrake.fr. Handbrake can read from discs or from MKV/MP4 containers.
FYI, ripping, converting, transcoding, & decoding are used interchangeably at times. Here’s how I use them:
Rip: Providing an unaltered copy of desired video/audio/etc tracks into the desired container (i.e. MKV, MP4, etc). To me, MakeMKV rips discs, even though their website uses the terms transcode and convert. It also uses the phrase, “…but not changing it in any way.”
Transcode: Altering the selected video/audio track by compression, converting to another format, etc. Handbrake & similar tools (ex: Plex transcoder), alter the selected track. It may convert the video to another format, remove detail from the video so it can stream at a lower bandwidth, etc.
