Server crash after recording TV show

There are several other threads talking about this issue and nowhere has a Plex support person replied. What’s going on?

Plex server keeps stopping

Server Version#: 1.27.2.5929 Player Version#: N/A Computer - Windows Server 2019 with all the latest patches. I have been using my setup for years with 0 problems. 2-3 weeks ago I noticed that Plex stops randomly throughout the day.
