I use Plex for Win8 on my Surface RT. Is it possible to select the default player as my RasPlex player (Big Screen) without having to select players every time? Easy for me, but part of the wife proofing experience.

Perhaps all the player selections should be made similar to how Chromecast Target is selected?
That might not solve the OPs issue of setting a default player but I would think incorporating DLNA players as well as DIAL targets in a single menu would be the best way to handle all Targeted Destinations.
Once done you could add a button to set one target as the default target that would easily let you change from default target during connection.
That would simplify the process not only for Smart TV and DLNA Targets but also allow you to set a default CCast to connect to as well.
