I teach some classes and take I take videos of these classes for reviewing later. I am trying to setup a library on plex called “Classes” and then I have 15 folders, one for each class within that library. I have the Main Classes library setup as an “Other Videos” library type.
When I first go into the Classes library, everything is all jumbled together, then when I switch to folder view everything looks great and organized.
Is there a way to get plex to default to Folder View for a specific library? Or even for a specific library type?

That would require user choice and Plex does not think users are smart enough to handle any but the most rudimentary level of choice. That seems highly unlikely to change. Therefore you will not see any change like you want in the foreseeable future.
I believe the ability to set certain libraries to a folder view default has been asked for many years ago and continues to be asked for to this day. Plex is VERY unlikely to implement such an obvious enhancement as it involves giving the users the ability to actually control the way their media gets viewed.
Plex’s answer is always to name your media correctly and, while this has a great deal validity for most media, it is quite inappropriate for some. I have solved a similar problem with audiobooks by using playlists. It is a workaround that solves my problem and you might consider playlists to solve yours. You could have a playlist for each class and then simply access playlists when you want to view your classes.
