Set the default video quality for local AND remote servers to max / original

This is something that has annoyed me for a long time. So much so that I have disabled transcoding entirely.

Whenever someone with access to my server re-install their client, they get it coming with those crazy default remote video quality settings that are making the client ask the server to transcode to potato-quality.

Are you assuming the average Joe, used to POS quality HBO will find this horrendous and dive into settings? Most likely he will not and just accept the poor quality. Making my server work overtime to bastardize his experience. It would make more sense to default to max. If the movie buffers every ten seconds, he sure will try and remedy the problem.

And 3 mbps? How on earth did you guys come up with that value? Unless your key demographic is Botswana, this number is just ridicilously low. The average internet-conection will handle Plex streaming of ANY media and with tons of overhead. Just see for yourself: https://worldpopulationreview.com/countries/internet-speeds-by-country/

So please. Set the default video quality settings for all servers, remote AND local, to max. This crazyness has gone on for to long.
