With all the hard work ljunkie has done we now can implement the historical logs that we all want ourselves. At least until the devs get around to building it into the server.

Feature Request in order of importance:
1)Ability to see who is streamingImplemented!2)Ability to see what they are streamingImplemented!
3)Ability to see when they streamed it
4)Log the above in a nice list sorted by date/item/user
5)Ability to limit the number of simultaneous Transcoding streams.
6)Ability to set transcoding quality for remote clients on the servers side (Thanks Eric Leese)
7)Ability to prioritize streams by user. As a server owner I want priority over those I share with. Consider this a $29 donation for the above functionality. Please speak up if you will find this useful. I know there is a ton of demand out there, but we need to do a better job of communicating this need to the developers. I want this as one of their top priorities:)
I would love to see IP Address added to the list. Lots of people use Plex/Web to watch and the only info we get is which browser they used. As long as they all use the same browser, 6 different people could use the same account.
This all seems really great, and I definitely have been wanting something like this for some time. That being said I'm grateful for what the dev's have done so far and I don't think we are really in a position to demand anything. If you don't like where it's going or what it has you can always stop using it. That being said I really want these features if you are listening plex developers, their is both a need and want from many users for these features. Comcast for example will be charging $10 dollars per 50GB once you go past a threshold.

I think that it is so cool when I can see that my mom, who is 2 states away, is watching Superbad on her roku. Cool times that we live in.

PlexWatch now includes the IP addresses, and Eleese is working on making a front end web solution. I am helping him test it out now, take a look at how slick it is. I also updated the OP with a call out for specific IP logging.

I can help with the setup on OS X, not sure if the process is different on Windows. I would recommend checking out the PlexWatch specific thread linked above.
Is there a plex channel (unofficial or official) that can read plex watch information and display it?
It would be great if I could view the information from my Roku (via the channel). Although when the plex watch web ui is complete, it will make this desirable for me to pursue. Thanks!

Funny you ask. I might have something in the near future for the Roku (RARflix). It also might have a neat feature to kind of sync playing with the user.
Edit: it has nothing to do with plexWatch even though I wrote that :) it's more in relation to the live now playing. I would love if someone wrote a channel though for plexWatch! Not sure I have the time.

I don't mean to stop that folks are mentioning it as an alternative (an awesome one BTW) . but this thread is mainly for discussing the feature requests it involved. its not a PlexWatch support thread
