Should I use Episodes when naming Star Wars, Episode I, Episode II etc?
Plex uses the movie database for metadata so just name them like on their site:

To have the video files detected automatically with no input from your end, name the files based on the official titles on TheMovieDB. Then, once the movies are detected by Plex, you may click the Pencil icon for each title and have them show up however you like. I renamed them (in plex) using regular numbers, since roman numerals don’t sort alphabetically very well:
My collection sorts them by release date, so it ignores the names anyway. (I’m gonna change that right now)
If you use an odd file-name structure that Plex doesn’t recognize the files, you can STILL detect them manually by doing Match… or Fix Match… on the file in Plex. Once they are recognized by Plex, you can name them however you like to. You can name them Bob 1-9 if you want to once they’re matched in Plex.
