I’m switching my ISP to Starlink. Anyone have any idea how to configure remote for Starlink yet?

That being said, Plex has a Relay option: Accessing a Server through Relay | Plex Support
That might work (though there are some limits compared to direct remote access).
I’ve been eyeing Starlink so your question made me think this through a bit so those links are for me just as much as for you. 
AFAIK, there will be significant packet roundtrip delay times over a satellite connection.
Even though they are not using a geostationary orbit but a much lower one, I think it will be not great for Plex use.
