Im new to Plex after seeing my friend with it being able to watch new movies like “Free Guy” and shows like Game of Thrones and Yellowstone, but after getting the premium annual pass, I dont see those shows and movies she has. Am I missing a step or something?

Plex is not a subscription service like you are thinking, it is used to host your own content or stream from another users library. The content Plex provides is generally older stuff that not a lot of people are interested in.
You would need to ask your friend to share their server with you.
