Anytime I add a subtitle to a movie (any type of subtitle), Plex server stars to transcode the video (maybe it burns the subtitle in the video). I think it is a problem with the player, because on other devices I didn’t encounter this problem.

What kind of subtitles do you have? Some devices do not support subs like SSA or ASS, or PGS.
If you have SSA/ASS, go to subtitle settings and change burn subtitles to images only. This will only transcode PGS subs, and turn SSA/ASS subs into normal looking subs.
I’ve tried with SRT and AAS subs. My subtitles on my Plex clients are set to “only image format”. And so, the video is transcoded when I add a subtitle.
It seems that the problem occured only on this video. On other movies it won’t transcode.
