My enable subtitles option on my Samsung TV app is not enabled anymore and I can’t turn it back on.
I have fiddled with the settings under my user profile on the server but nothing. Any ideas.

That’s a very old, unsupported version of a Plex app that developed by a volunteer who is no longer able to maintain it (due to health reasons).
It may be that the latest server version has changes that are not compatible with such an old Plex app.
Running 2.012 against a PMS version 1.19.1, and can not confirm this
Suggest you uninstall on the TV, power off TV, wait 2 min, power back on, and then reinstall the App
