The server app will randomly turn off every 4 days or so. The logs on the synology do not show anything happening.

Do you have hardware accelerated transcoding enabled in Settings → Transcoder?
If so, deselect both Use hardware acceleration when available and Use hardware-accelerated video encoding and save changes.
Your NAS has the AMD Ryzen Embedded V1500B, and Plex does not support hardware accelerated transcoding on AMD GPUs on Linux based systems.
I do not believe it is the cause of your problems, but there’s no reason to have Plex check for h/w acceleration when it isn’t supported.

Also, just noticed it crashed again. Here is the latest log. Notice anything? - Anywhere i should be looking in the logs? The crash report is very generic…

I do not see a reason why Plex is stopping.
I did find another thread where several others are experience the same issue.
Please configure Plex Media Server to log its memory usage. Follow the instructions in this post.
This adds memory usage info to some log file entries (ex: Memory Usage: 53.0 MB/2423.0 MB).
If/when Plex stops again, pull the log files and post on the Plex stops running every once in awhile? Why? thread.
Hopefully your logs along with the others will help find the root cause of the problem.
